Chickpeas, probably originating form the Middle East, have travelled across the whole of the Mediterranean basin. They may be found in pancakes in Nice (socca), as a paste in Greece and Lebanon (hummus), as a spread in “oriental sandwiches”, as flour or simply as a vegetable in a wide variety of recipes.

Slightly less spicy than traditional hummus, this chickpea delicacy should be eaten as an aperitif on toast or with Lebanese bread, or used as a dip for vegetables in Bagna Cauda style, with anchoyade. It is also a subtle accompaniment to grilled meat.
